Recipe: Salmon With Salsa Verde

A wonderful salmon recipe with a great source of Omega-3 fatty acids.

Serves 4

Salsa:

  • 1/4 cup extra-virgin olive oil

  • 1/4 cup fresh lemon juice

  • 1/2 cup chopped fresh flat-leaf parsley

  • 2 scallions, finely sliced

  • 3 tbs chopped fresh mint leaves

  • 2 tbs capers, rinsed, drained & chopped

  • 1 tsp lemon zest

  • 1 tsp crushed red pepper flakes

  • salt & black pepper

Salmon:

  • 4-5 ounce center cut salmon fillets, each about 3-inches square

  • Salt and pepper

Salsa: Add the olive oil, lemon juice, parsley, scallions, mint, capers, , lemon zest, and red pepper flakes. Toss lightly and season with salt and pepper, to taste. Set aside.

For the salmon: Season fish with salt & pepper. Cover the fish and bake for 25 minutes at 350 degrees. Transfer the salmon to a platter and allow to rest for 5 minutes. Enjoy
